Recipe of the Month: Ginger-Maple Oatmeal

2 cups water
1 cup rolled oats
1/4 cup dried tart cherries or cranberries
1/4 cup goji berries
2 teaspoons fresh grated gingerpinch salt
1/4 cup sunflower seeds
1 tablespoon maple syrup
1. Bring water to a boil.
2. Add oats, cherries or cranberries, goji berries, ginger, and a pinch of salt; reduce heat to low. 3. Continue cooking until water is absorbed and oats are nice and creamy, about 7 minutes.
4. Add sunflower seeds and maple syrup; stir and serve.
Note: Substituting nut, rice, or soy milk for the water will make the oatmeal even creamier.
